"For centuries, impurities in the Wild Yeasts required for brewing beer often destroyed the product. Fortunately, Emil Christian Hansen solved this problem in 1883 at the Carlsberg Laboratory, by perfecting a method to propogate pure yeast. This propogated yeast is appropriately named Saccharomyces Carlsbergensis, and Hansen's method of creating it is still used by breweries the world over."
